Our olive groves cover 11 hectares at Podere Celle, in Ripa d'Orcia.
Our family has reserved this land for olive trees since the 18th century,
believing that the west/north-west exposure and constant ventilation are essential
for the health of the plants and fruit. And they were right indeed!

Unfortunately, there are few examples of the old olive trees, as the frost of 1985 caused the death of hundreds of plants. In 1986, we planted new olive trees in the traditional potted system, with plant spacing of 5 x 6 metres .
The three plots are located at a height of 350 m a.s.l. on clay and limestone soil.
We have chosen to plant 60% Correggiolo 40%, Leccino and Moraiolo.
Every spring, we entrust the pruning of our olive trees to an experienced team;
pruning is carried out on rotation. It is an important and delicate operation that must be carried out by the careful and experienced hands of the “potini” (pruning experts).

All olive groves, along with the rest of the farm, were awarded organic certification in 2009.

Vineyards

6 hectares, all the vineyards are certified organic since 2009.

Crops

70 hectares, dedicated for organic cereals mostly spelt and durum wheat.
