The olives are picked by hand in our olive groves in Val d’Orcia, in the municipality of San Quirico.

 

Our family has always had a passion for olive oil and a love for olive trees. The first olive grove, known as Olivetone, was planted before 1800. Unfortunately, many of the beautiful centuries-old trees were wiped out by the frost of 1985. We did not lose heart and we replanted 11 hectares of olive trees, divided into three olive groves around Podere Celle, all trained in keeping with the traditional pot system.

  • Cultivar: 60% Correggiolo, 40% Leccino and Moraiolo
  • Age of olive trees: 30/35 years
  • Manual harvest: between October and November
  • Pressing: cold pressing within 48 hours of harvesting at the “Oleificio Val d’Orcia” mill in Castiglione d’Orcia
  • Production: 2,500 – 3,000 litres of oil per year.

Our advice: it is the ideal condiment for any Mediterranean dish. It is perfect for Tuscan dishes such as soups (spelt, legumes… ) and cooked vegetables, as well as for cooking all types of meat and fish. It is also suitable for dressing raw vegetables and salads.
